I remember watching Classic Concentration Years ago but I remember one particular game in which a contestant got so many prizes from off the board that they had to use the other players board to list all the prizes listed so far. Did this really happen or is it just my memory playing tricks on me?

It happened. The PC version of the computer game incorporated that aspect in as well.

I'm pretty certain I actually saw this happen on the original Downs version, though I can't think of how it could have (because I don't think there were enough prizes on the board to cause that).

Wasn't there a situation where some amount of prizes could carry over to the next game...?

If neither player solved the puzzle after a full reveal, each player could choose three prizes from the last game and bring them to the next one.
